Cheesy, creamy pasta
Ingredients:
Any good quality Italian pasta ( 300 gm uncooked)
1 200 ml. pack of Amul cream,
some milk,
100 gm any good grateable cheese – Amul cubes, parmesan, mozzarella,
I onion finely sliced,
some Italian herbs – oregano, parsley fresh or dried,
1 tsp. freshly ground black pepper,
salt to taste,
a pinch of sugar
2 tsp olive oil
1 large capsicum chopped.
Method
Cook the pasta al dente ( just done) as per instructions on the packet. Remember to put lots of salt in the boiling water. This is the only opportunity to salt the pasta. Drain and keep aside. Simultaneously, prepare the sauce. Heat olive oil in a large pan. Add onion, lightly saute it till transparent. Add the cream and some milk and heat till the sauce bubbles. Add the chopped herb or dried ones. Add pasta to it and mix all ingredients. Put sugar, salt, ground pepper and capsicum. The sauce must be thickish. Take it off the fire and add grated cheese, chopped herbs and serve. You could also pop it into a 200 deg C oven for 10 minutes after putting in the cheese so that it browns a bit. Both ways, it is cheesy and yummy.
